Frozen Sweet Potato Waffles
Waffle-licious Sweet Potato Delight
Ingredients:
Wet Ingredients
1 cup sweet potato (peeled, cooked, smashed)
2 eggs
1⁄4 cup coconut oil
3⁄4 cup unsweetened almond milk
Dry Ingredients
1 cup oat flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon turmeric (optional)
Preparation:
Set oven to 400 degrees.
Prepare sweet potatoes by cooking and mashing them. Once you have mashed sweet potatoes, then add other wet ingredients and mix until smooth.
In a smaller b owl, mix together all dry ingredients.
Add the dry ingredients to wet ingredients and mix together with spatula.
Fire up the waffle iron, spray it with coconut oil, then evenly distribute the batter onto the waffle iron. If you want to personalize them, toss in any extra ingredients, then close lid and cook. Repeat this with rest of batter.
Place cooked waffles on a baking rack and bake them in the oven for about 8 minutes a 400 degrees in order to firm up some.
Allow the waffles to completely cool to room temperature before wrapping them individually in plastic wrap and storing them in the freezer.
