Savory Ground Beef Skillet
Ingredients:
1 pound ground beef
1 small onion, chopped
1 red bell pepper, chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can black beans, drained and rinsed
1 can diced tomatoes with green chilies, undrained
1 cup frozen corn
1/2 cup shredded cheddar cheese
Chopped fresh cilantro, for garnish (optional)
Instructions:
Heat a large skillet over medium-high heat. Add ground beef and cook, stirring occasionally, until browned and cooked through, about 8-10 minutes.
Add onion, bell pepper, and garlic to the skillet and cook until vegetables are tender, about 5 minutes.
Add chili powder, cumin, smoked paprika, cayenne pepper, salt, and black pepper to the skillet and stir to combine.
Add black beans, diced tomatoes with green chilies, and frozen corn to the skillet and stir to combine. Reduce heat to medium-low and simmer for 5-10 minutes, stirring occasionally.
Sprinkle shredded cheddar cheese over the top of the skillet and cover with a lid. Cook until cheese is melted, about 2-3 minutes.
Garnish with chopped fresh cilantro, if desired, and serve hot.
