Green Goddess Chicken Salad
Ingredients:
2 cups cooked and shredded chicken breast
2 kiwis, peeled and sliced
1 avocado, peeled and diced
4 cups mixed salad greens
1/4 cup chopped fresh cilantro
1/4 cup chopped red onion
1/4 cup chopped unsalted almonds
2 tablespoons olive oil
2 tablespoons fresh lime juice
1 tablespoon honey
Salt and pepper to taste
Instructions:
In a small bowl, whisk together olive oil, lime juice, honey, salt, and pepper.
In a large mixing bowl, add cooked chicken breast, kiwis, avocado, mixed greens, cilantro, and red onion. Toss to combine.
Drizzle the dressing over the salad and toss again to coat.
Sprinkle chopped almonds on top of the salad.
