Grilled Chicken Taco Salad
Fiesta Chicken Salad
Ingredients:
2 boneless, skinless chicken breasts
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
4 cups chopped romaine lettuce
1 cup cherry tomatoes, halved
1/2 red onion, diced
1 avocado, diced
1/2 cup corn kernels
1/2 cup black beans, rinsed and drained
1/4 cup chopped cilantro
1/4 cup crumbled feta cheese
1/4 cup sour cream
1/4 cup salsa
Juice of 1 lime
Tortilla chips for serving
Instructions:
Preheat grill to medium-high heat.
In a small bowl, mix together chili powder, cumin, garlic powder, onion powder, salt, and pepper.
Season chicken breasts with the spice mixture and grill for 6-7 minutes per side or until cooked through.
Remove chicken from grill and let it rest for a few minutes before slicing into strips.
In a large bowl, toss together romaine lettuce, cherry tomatoes, red onion, avocado, corn, black beans, and cilantro.
In a small bowl, mix together sour cream, salsa, and lime juice.
Add chicken strips to the salad and drizzle the dressing over the top.
Sprinkle feta cheese and tortilla chips over the salad and serve immediately.
