Grilled Salmon & Avocado Salsa
Salmon Avocado Tango
Ingredients:
4 salmon fillets
1 tsp olive oil
1 tsp chili powder
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
1 avocado, diced
1/4 red onion, diced
1 jalapeno pepper, seeded and diced
1 lime, juiced
2 tbsp fresh cilantro, chopped
Salt and pepper, to taste
Instructions:
Preheat grill to medium-high heat.
In a small bowl, mix together the olive oil, chili powder, cumin, garlic powder, smoked paprika, and salt.
Rub the spice mixture onto the salmon fillets.
Grill the salmon for about 5-7 minutes on each side, or until cooked to your desired level of doneness.
While the salmon is cooking, make the avocado salsa. In a medium bowl, combine the diced avocado, red onion, jalapeno pepper, lime juice, and cilantro. Mix well and season with salt and pepper to taste.
Serve the grilled salmon topped with the avocado salsa.
